Newman's Sweet Potato and Ginger Soup
- 2 sweet potatoes (diced)
- 2 teaspoons Newmans Crushed Ginger
- 1 medium onion ( diced)
- 1 litre chicken stock
- 1 tablespoon butter or oil
Sauté onion in butter or oil until golden. Add ginger and potato, sauté a further two minutes. Cover with stock and simmer until potato is soft. Puree. Thin to preferred consistency with cream or milk.
Reheat, do not boil.
